Almond Baked Chicken Recipes

Recipe #1: Creamy Almond Baked Chicken
Ingredients:
- 3 pounds broiler-fryer chicken, cut up
- 3/4 cup sliced almonds
- 1/2 cup sour cream
- 1 1/2 cups half and half cream
- 6 tablespoons margarine, melted
- 1 tablespoon butter, melted
- 1/2 teaspoon curry powder
- 1/2 teaspoon crushed oregano
- 1/2 teaspoon freshly ground pepper
- 3 tablespoons fine dry bread crumbs
- 1 teaspoon celery salt
- 1 teaspoon salt
- 1 teaspoon paprika
- some mushrooms
- some flour
Instructions:
First, in a large bowl, add in the butter, celery salt, salt, curry powder, paprika, oregano and pepper. Combine and mix well. Coat the chicken pieces with flour and then with seasoned butter. Arrange the chicken pieces in a single layer in a baking dish. Sprinkle in the almonds evenly across the baking dish and pour in the half and half cream between the chicken pieces. Bake them covered for 45 minutes at 350°F (176°C).
Uncover and spoon about half cup of sauce from the pan. Blend the dry bread crumbs with 1 tablespoon of melted butter. In a bowl, add in the sour cream and that half cup of sauce. Combine and mix well then pour evenly over the chicken pieces again. Sprinkle in the buttered crumbs evenly. Bake uncovered for 15 minutes until the chicken pieces are tender. Serve and enjoy!
Recipe #2: Almond Baked Chicken With Potato Chips
Ingredients:
- 2 cups cooked chicken, chopped
- 2 ounces sliced almonds
- 2 cups celery, finely chopped
- 1/2 cup onion, finely chopped
- 2 tablespoons lemon juice
- 3/4 cup mayonnaise
- 2 tablespoons butter
- 1 cup crushed potato chips
- 6 ounces Monterey Jack cheese, grated
Instructions:
First of all, in a saucepan, add in the melted butter and toaste the almonds until golden brown. Next, transfer the toasted almond into a mixing bowl and add in the cooked chicken, chopped celery, chopped onion, mayonnaise, and lemon juice. Combine and mix well. Pour everything into a baking dish and sprinkle the top with grated Monterey Jack cheese and crushed potato chips. Bake at 350°F (177°C) for 30 minutes. Serve and enjoy!
